Beef stew with vegetables and yogurt sauce
You have certainly never eaten such a delicacy. Beef stew with vegetables like no other! I tried to Larissa in "The kitchen of Grandma," and loved it!

- 1 kg Beef meat, Neck (chuck) cut into large bites
- 1/2 cup Olive oil
- 1 pc Chopped onion
- 2 pcs Chopped spring onions
- 1 pc Chopped leek
- 1 pc Green pepper cut into squares
- 2 pcs Red peppers cut into squares
- 1 pc carrot cut into small squares
- 1 cup White dry wine
- 1/2 kg Chopped tomatoes
- 2 pcs Chopped hot peppers
- 1 tbsp. Oregano
- 1 tbsp. Mint
For the yogurt sauce
- 500 g Strained yogurt
- 1/2 tbsp. Oregano
- 1/2 tbsp. Mint
- 1 tbsp. Vinegar
- Salt
- freshly ground pepper
For the beef casserole with vegetables, first heat the olive oil and brown the pieces of meat all around. Add all the chopped vegetables, the onion, the spring onions, the peppers, the leek, the carrot and the hot peppers, and let them wither for a few minutes. You can add whatever vegetables you like. Peas and round beans are very suitable. Quench with the wine and add the tomato.Cover the pot and lower the heat. Simmer until the meat is well tender. If necessary, add a little water during boiling. The food should not have too much liquid! The fluids that the vegetables will produce are enough.Towards the end of the cooking, add the herbs and salt and pepper. When the meat boils and softens, put all the ingredients for the yogurt sauce in a bowl. Let the food stand for 5 'until the boil drops to add the yogurt sauce.Add salt and pepper and mix. Remove the food from the heat and pour over the yogurt. Stir lightly and serve with potatoes or rice.
